Parfait for 5 persons



200g fresh or 20g dried Lion´s Mane (let the dried mushrooms soak in water before using)
250g Créme fraîche
50g parsley
2 cloves of garlic
Salt, pepper, lemon juice

For this simple and quick recipe cut the Lion´s Mane into small cubes. Add the fine minced parsley and mix with the créme fraîche. Press and add the garlic and add salt, pepper and lemon juice to taste.

Tip: Do not wash the fresh Lion´s Mane or it would soak with water. To make the garlic more digestible remove the seedling from the middle of the garlic clove.
This recipe also works very well with Shiitake in combination or instaed of the Lion´s Mane.
